Winemaking at Fall Bright

We have been unable to locate a new source of Clinitest tabs. Back order dates have ranged from next week to July! So we are switching to Accuvin Residual Sugar Test Kits, each kit has ten tests.

The ACCUVIN Residual Sugar Kit tests only for fructose and glucose sugars, the sugars reduced in primary fermentation. Reducing sugars in wine consist of hexoses (mainly glucose and fructose) and pentoses (mainly arabinose and xylose). The pentoses are not fermentable by wine yeasts. Since pentoses alone can vary from 0.4 - 2.0 g/L, the best measure of primary fermentation is the determination of glucose and fructose. The test range is 100 - 2,000 mg/L. (There is always more than meets the eye!)

The Accuvin Residual Sugar Test Kit includes 10 tests in a black barrier tube with a color chart label, 20 samplers, and illustrated complete how-to-run test instructions. The insert includes a summary Interpretation explaining how to use the test results. A monitoring chart is included. The label with another color chart is on the front of the kit.

Accuvin Residual Sugar test kit is easy to use. It is targeted for drier wines than the Clinitest tablets. With the Accuvin test kit you can actually tell if your wine is bone dry. Clinitest tablets never went to zero due to reactions with non-fermentable pentoses, and from some other interfering substances.

However, for winemakers who want and have some remaining residual sugar, the wine sample can be diluted 1:10 to keep it in the range of the tests. The person running the test can do the simple 1:10 dilution using distilled water. A 1:10 dilution is 1 part of sample plus 9 parts of diluent (distilled water or a Accuvin diluent). In this way the test solution is one tenth as strong and you would multiply any answer you observed by 10 to get the concentration in the original sample. The same with a 1:20 dilution: 1 part sample and 19 parts distilled water or commercial diluent.

We have lost our source for Bocksin for hydrogen sulfide issues and have gotten in a product called REDULESS. Reduless is a new, proprietary formulation of inactivated yeast developed by Lallemand to improve the overall quality of both red and white wines. Its formulation is naturally rich in copper; making it a useful option to decrease H2S, dimethyl sulfide and other sulfur defects. Reduless helps increase roundness and smoothness and can decrease phenol related defects. Grape varieties prone to negative sulfur compounds (such as Syrah, Pinot Noir, and Chardonnay) particularly benefit when treated with it. (I would add Seyval to this list. These varieties tend to have low nutrient levels and are prone to problems.)
Recommended contact time is 72 hours.

MORE JUICES AVAILABLE AT FALL BRIGHT, THE WINEMAKERS SHOPPE

How can we go from being sold out (holding for pre ordered juices) to limited or available? Filtering is one means of turning yuck to great juice. We now have extra Baron's Red Blend and Riesling! We found a barrel of Traminette, (yes, found). So now we have enough to fill all orders, plus after filtering, extra.

We have a fair list of juices still available. If you were planning on coming for juice and weather gets in your way, please reschedule that trip. We will have harvest hours of Tuesday to Sunday, including Sunday, 10-5 EST until November 6, 2011. Other pick up times can be arranged after that. Post harvest hours will be Friday and Saturday 10-5.

Riesling at Fall Bright 2010

Marcy...we finally got last years Riesling bottled almost a month ago, took a bit of time and coordination, but we ended up with 42 bottles between us. Oh, you want to know HOW it came out?
Fantastic !!!
Something like 1.5 brix, and it is just one hell of a great wine. We knew that at bottling, but waited a few weeks. I opened one last weekend at the end of the airshow for my buddies, figured we'd have a small taste and then bring the rest down for the group...bottom line, it never made it.

Not sure about what we do this year...as I really love the Riesling, keep thinking about the Gamay though, been years since I made that. SS
